This fully washed Gr.1 lot comes from the Worka Nenke washing station in Gedeb, near Yirgacheffe. Worka Nenke processes cherries from 2,950 local smallholder farmers. The station is located at 1,983m above sea level and is served by the Lekole River. Farmers in this region typically grow Jarc (a sub-variety inherited from Ethiopia) on small plots of land around their home. These plots are therefore colloquially known as “garden coffee”.
The Kebele (village) of Worka is located in Gedeb District, Gedeo Zone in the Southern Nations, Nationalities and Peoples' Region (SNNP) of Ethiopia. The station is not far from the town of Gedeb and is widely considered to be part of the Yirgacheffe coffee growing region. Over a number of years, the region has developed a distinguished reputation for fine coffees, producing some of the most sought-after micro lots in the world. The combination of high altitude (up to 2,200m in some areas), fertile soil, consistent and abundant rainfall and a wealth of local knowledge are all factors that contribute to the high status of Yirgacheffe coffees.
The local heirloom varieties, which grow wild in Ethiopia, are responsible for the unique flavor notes that result in an unusual yet refined cup. When processed naturally through sun-drying, they feature juicy, candied stone fruit flavors, floral and chocolate notes with a creamy body.
Cherries are selectively hand-picked for ripeness and sent to the wet mill for careful sorting and pulping, before fermentation for 36-48h, depending on weather conditions. After this point, the parchment coffee is thoroughly washed and sorted by bean density before being sun-dried on raised African beds for 10-12 days (until the ideal moisture level has been reached). During the day, the parchment must be periodically raked and turned to ensure a consistent drying process. The coffee is also covered between 12-15h to protect it from the strong sun, and at night to protect it from rain and humidity. Once the coffee has dried to the appropriate level, it is transported to Addis Ababa for dry milling, sorting, intensive sorting and hand sorting, before being packaged at GrainPro for export.
