This coffee comes from La Muralla, an informal group of small producers based in San Agustín, one of the southernmost areas of the Huila department in Colombia. Although they now work collectively, many of these producers have been connected for years and were part of the original group that started this project. Most belong to a relatively young generation of coffee growers, many still in their twenties, bringing contagious energy and a strong passion for producing high-quality specialty coffee.
The variety of this lot is Pink Bourbon, grown between 1,700 and 1,900 meters above sea level, where the mountain conditions allow for slow and balanced cherry maturation. In this part of Huila, the combination of altitude, fertile soils, and a temperate climate creates an ideal environment for producing coffees with elegance and complexity.
In 2022, a local buying point was also established in the center of San Agustín, allowing coffee to be collected directly from more producers in the area. This model simplifies logistics, reduces costs for farmers, and strengthens the direct relationship between producers and buyers, something particularly important during times when coffee prices have experienced strong fluctuations.
For this lot, a washed process was used, a classic method in Colombia that aims to highlight clarity and the expression of origin. After the careful selection of ripe cherries, the coffee is depulped, fermented, and washed before undergoing controlled drying.
The result is a clean and elegant coffee that reflects both the character of San Agustín and the collective work of the producers behind La Muralla.

El café necesita un tiempo de desgasificación después de ser tostado, y como trabajamos prácticamente sin stock, nuestros envíos los haremos respetando su reposo para que lo tengas en tu casa en los siguientes 2-3 días laborables.

Una vez recibimos el pedido, lo tostamos, lo reposamos, lo empaquetamos y lo enviamos... con este margen de tiempo te llegará listo para poder consumirlo en Filtro, y si esperas unos días más, para Espresso.

..las cosas salen mejor. No hace falta que te llegue tu café en 24h a no ser que quieras contemplar lo bonito que es el grano y el paquete ;)
